The Vision

Lexie's Bistro was born from a vision to bring an upscale, non-chain dining experience to the residents of West Henderson. Located within the Ilumina Residential Resort Community, we serve the neighborhoods of Inspirada, Anthem, and Seven Hills with chef-driven Italian-American cuisine that prioritizes quality, sustainability, and community connection.

Meet Our Founder

A Pioneer in Hospitality

Winnie Schulman, founder and president of AXUM Hospitality—a division of Schulman Properties—brings decades of experience in creating five-star resort-style amenities and community programs.

Her career has been dedicated to elevating everyday living through innovative hospitality concepts, including overseeing projects like Tuscan Highlands and South Beach Resort, implementing luxurious spa experiences, engaging community events, and chef-driven restaurant concepts.

A prominent Las Vegas philanthropist, Winnie serves as a board member for Boys Town of Nevada and is a founding member of Nevada Women's Philanthropy. Her contributions earned her recognition as the most influential figure in the non-profit sector during Boys Town of Nevada's 30th anniversary.

The Name

Named After a Special Little Girl

The story of Lexie's Bistro begins with a personal touch—it's named after Winnie's granddaughter, Lexie, whose love for animals like birds and owls inspired the restaurant's whimsical décor.

Walk through our doors and you'll notice woodgrain flooring, large windows flooding the space with natural light, and artwork featuring these beloved feathered friends. Every detail creates a warm, inviting atmosphere that feels like an extension of home.

This family-centric inspiration is evident throughout the bistro—from our open kitchen to the 1,900-square-foot patio with poolside views, lush garden seating, fire pits, and comfortable lounging areas designed for year-round enjoyment.

Chef Santos Lopez - Lexie's Bistro

Santos Lopez

Born in Oaxaca, Mexico, Chef Santos began his culinary journey at just 15 years old at the Michelin-starred restaurant Melisse in Santa Monica. His work ethic quickly earned him promotions from prep cook to sauté cook.

In 2014, Santos moved to Las Vegas to expand his culinary horizons, joining Eataly Las Vegas as Sous Chef and later helping open The Bedford by Martha Stewart as Executive Sous Chef. His expertise in building menus and creating unique dining experiences is paramount to the identity of Lexie's Bistro.

Orlando Pascua

Hailing from Lana'i, Hawaii, Chef Orlando grew up surrounded by a homesteading culture, living off the land and sea. He found his culinary passion working for Chef Roy Yamaguchi at Roy's Hawaiian Fusion.

Since moving to Las Vegas—what Hawaiians fondly call the "9th Island"—Orlando served as Chef de Partie at Wynn Las Vegas and rose to Executive Sous Chef at Eataly in Park MGM. His "New American" style blends his Hawaiian heritage with Italian passion, creating Lexie's unique flavor profile.
