Chef Santos Lopez – The Technician

Born in Oaxaca, Mexico, Chef Santos began his culinary journey at the impressive age of 15 at Melisse in Santa Monica—a restaurant that holds two Michelin stars. Working in a Michelin-starred environment teaches a level of discipline and attention to detail that stays with a chef forever.

After moving to Las Vegas, Chef Santos served as a Sous Chef at Eataly, the world-renowned Italian marketplace, and later helped launch The Bedford by Martha Stewart at Paris Las Vegas as Executive Sous Chef.

At Lexie's, Chef Santos brings that same obsession with quality ingredients and perfect technique to every plate of pasta he serves.

Executive Chef Orlando Pascua – The Innovator

Hailing from Hawaii, Chef Orlando cut his teeth working for the legendary Chef Roy Yamaguchi at Roy's Hawaiian Fusion. His ability to blend flavors and manage a high-energy kitchen led him to Las Vegas, where he rose to become the Executive Sous Chef at Eataly Park MGM.

Chef Orlando brings a unique "New American" style to our Italian-American menu, blending his heritage with classic Italian passion to create dishes that are familiar yet exciting.
